Baking Consultant

  1. Background

Secours Islamique France and Safadi Foundation are implementing a “Food security and Livelihood” (FSL) project in Dennieh, Tripoli and El-Mina region. The main objectives of the Project are: 1) To Offer technical and financial assistance to farmers and food processing groups that would help them to develop and added value of their products in quality and in quantity, 2) To support farmers and food processing group with access to markets. The Project is part of a longer-term strategy aiming at supporting and reinforcing capacities of local stakeholders, mainly farmers, local rural women.

  1. Purpose

Safadi Foundation is seeking to recruit a highly motivated and experienced Consultant in Baking to join its Training Team. The successful national candidate will be expected to:

  • Provide training content / curricula / field manuals /and information database.
  • Deliver technical trainings for training providers.
  • Provide advice on best practice in the relevant sector in Lebanon to maximize support for participants to market linkages.

Participants in the training are foreseen as women, living in the areas of Qalmoun, Tripoli, and Koura. The general objective of the consultancy is to train approximately10 women on the know-how of backing; theory and practice.

  1. Overall Responsibility
  • Introduce theoretically the Basics of Baking.
  • Describe properties and functions of basic ingredients used in baked goods.
  • Weigh and measure ingredients used in baking.
  • Resize recipes to meet production needs and equipment capacities
  • Scale, mix, mould, proof and bake yeast raised goods
  • Prepare typical Lebanese chemically leavened products (Saj, Mankouch and Tannour)
  • Prepare Genoise baking, muffins, croissants etc.
  • Demonstrate proper storage techniques for all baked products.
  • Conduct live demonstration (practical explanation) of the baking procedure with women.
  • Prepare a manual that includes written information as well as graphics, to be distributed at the end of the training including all the explanation of the baking preparation procedure.

  1. Tasks and Responsibilities
  1. Conduct brain storming sessions with the Food technology officer and/or the FSL Officer to have a project objective context and get a brief about the project.
  2. To use power Point Presentations, videos and case studies in training sessions as well provide participants with brochure and manuals.
  3. Final report of findings and recommendations: The Consultant shall report directly to SF’s Tripoli Office, in particular, to the Food Security and Livelihood Officer. S/he will submit the following reports at the end of the training sessions:
  • Presentation of training outcomes to the SF field team and technical advisors;
  • Narrative Report draft which includes: i) number of beneficiaries (disaggregated by gender and nationality), ii) providing technical guidance for future steps.

  1. Qualifications Required

 

  1. Person Qualifications:
  • Expert in food technology of Baking specifically.
  • Selected candidate should have an advanced experience in technical trainings; at least 3 years of experience.
  • Strong experience in delivering trainings to multicultural attendees
  • Knowledge and experience in working with NGOs/ local authorities for at least 3 years
  • Experience in development, design, and facilitations of training programs
  • Capacity to think creatively in dealing with vulnerable audiences
  • Strong interpersonal skills and a supportive technical and communication style
  • Strong written and oral communication skills, demonstrated ability of making effective presentations to Strong command of Arabic (the training language)
  • High reporting experience
  • Clear understanding of the political, geographic, and economic dynamics of Tripolie area
  1. Years of Experience: 3 - 5 years of experience in working in similar field
  2. Competencies:
  • Show respect to beneficiaries’ confidentiality
  • Respect and promote SF’s Policies and report to SF field officer any non-respect of SF’s policies amongst the teams or partners.
  • Address needs and requests in a professional way.
  • Report any incident or act that causes any harm to beneficiary or to others.
  • Always respect a refusal of participation.
  • Help in ideas to support the team of the FS and Agricultural Livelihood
