Head Chef

I. INTRODUCTION

NGO's Background Information

The Lebanon Reforestation Initiative (LRI) is a Lebanese NGO registered at the Ministry of Interior and Municipalities under no. 1186 on 18 June 2014. LRI started as a project launched in 2010 by the United States Forest Service (USFS) Office of International Programs (IP) through the support and funding of the United States Agency for International Development (USAID). LRI's mission is to restore Lebanon's native forests and to instill commitment to reforestation and wildfire prevention and response, through capacity building of local communities and organizations.

LRI has signed an MOU with Ehmej Municipality to support in the management of Arz Ehmej, the ecotourism/conservation area in Ehmej.

II. PURPOSE OF THE POSITION

LRI seeks a full-time Head Chef for Arz Ehmej for the period of one year, renewable based on available funding and performance. The Head Chef will help the NGO team in developing and providing eco-friendly affordable local food for ecotourists visiting the Arz Ehmej area.

The Head Chef is expected to perform the following duties related to the Arz Ehmej activities:

  • Control, direct and implement food preparation process and any related activities;
  • In the presence of other assistant chefs, coordinate task distribution among all to ensure smooth and efficient workflow;
  • Support in constructing menus with new and existing culinary creations ensuring the variety and quality of the servings;
  • Ensure authenticity of items provided on the menu and include local options that can highlight Ehmej culinary specialties;
  • Manage the Saj station; including preparing and delivering all menu items on Saj and regularly updating the Reservation & Sales Coordinator on stock status and needed items;
  • Prepare daily breakfast trays for bungalows and coordinate with staff responsible for room service to ensure their timely delivery;
  • Ensure good sanitation in light of HACCP rules and COVID-19 instructions for kitchen and food sanitation;
  • Assist in any other related activities may reasonably be required;
  • Report to LRI’s project manager.

III. REQUIREMENTS

The Head Chef should possess the following competencies, skills, and experience:

  • At least 5 years of experience managing restaurant kitchens;
  • Strong analytical, communication and inter-personal skills;
  • Good positive attitude;
  • Living in Ehmej;
  • Basic language knowledge.
