Slaughterhouse Field Officer

•  Oversee daily slaughtering operations at the assigned slaughterhouse(s) to ensure all Qurbani animals are slaughtered on schedule according to the project timeline.
•  Coordinate with slaughterhouse management, butchers, and veterinarians to ensure smooth workflow and address any delays or issues immediately.
•  Ensure that all slaughtering follows approved religious (Halal) and hygiene standards, including proper bleeding, skinning, and evisceration techniques.
•  Monitor that meat is handled properly at all stages, including immediate transfer to clean surfaces, proper trimming, and separation from contaminants.
•  Supervise the chilling or refrigeration of meat immediately after processing to prevent spoilage, ensuring that storage areas are clean and set to appropriate temperatures.
•  Verify that meat is properly portioned, packed, and labeled according to project specifications before handover to distribution teams.
•  Conduct regular spot checks on butchers and slaughterhouse workers to ensure compliance with food safety and hygiene protocols (e.g., clean tools, handwashing, protective gear).
•  Document daily the number of animals slaughtered, meat quantities produced, and any nonconformities or incidents encountered during the shift.
•  Report immediately to the project manager any delays, quality issues, or shortages that could affect distribution timelines.
•  Coordinate with distribution officers to ensure timely handover of processed meat for transport to distribution sites.

 Requirements

•  Previous experience working in a slaughterhouse, meat processing facility, or food production environment is required.
•  Knowledge of Halal slaughtering practices and basic food safety / hygiene principles.
•  Available to work daily during the Eid alAdha period.
•  Strong observational skills and attention to detail.
•  Ability to follow instructions closely and report issues clearly and immediately.
•  Basic literacy and numeracy for recordkeeping (e.g., counting animals, noting quantities).
•  Ability to communicate effectively with slaughterhouse workers, butchers, and project staff.
•  Fluency in Arabic is required (spoken and written).
