Food Preservation and Packaging Trainer (Consultancy)

Operating since 2004 in Lebanon, DRC has addressed the needs and rights of vulnerable populations, working initially with Palestinian refugees (since 2004), Iraqi refugees (2007-2010), Lebanese IDPs (during the 2006 conflict), migrant domestic workers (since 2009) and, since 2011, responding to the Syrian refugee crisis.  

DRC Lebanon is currently delivering programming in protection, housing, infrastructure, basic assistance, livelihoods, and community development interventions. This myriad programming seeks to address the immediate needs of displaced populations and concurrently support vulnerable host populations. DRC has five offices spread throughout Lebanon in, Beirut, the Bekaa, Saida, Tripoli and Qobayat.

About the job 

DRC is looking for an experienced service provider to provide vocational training on Food Preservation and Packaging to the identified trainees in Kfarzabad area in Bekaa

Your main duties and responsibilities will be:

  • Assigning a full time schedule of 20 hours for one week to offer the trainings sessions of 4 daily hours for the identified beneficiary;
  • Developing a tailored learning plan to introduce the principles of the manufacturing processes and technologies used in the production of food products and the preservation issues associated with food quality and safety in food production;
  • Assist in procuring the training kit: Paring knives; Peelers; Tongs; Slotted spoons; Stainless steel bowls of various sizes; Mixing spoons; Ladles; Kitchen shears; Jar lifters; Funnels; Lid wands; Bubble removers; Timers; Colanders; Measuring spoons; Measuring cups (for dry and liquid ingredients); Stock pots; Saucepans with lid; Water bath canners; Steamer/blanching pot; Pressure canners (1 dial gauge; 1 weighted gauge); Flexible cutting boards; Dish soap; Canning jars; rings and lids; Dish towels; Pipe cleaners; Oven mitts and pot holders; Food scale.
  • Provide weekly reports to measure progress, identify barriers to learning and recommend action to overcome barriers;
  • Reporting on a regular basis to the livelihoods officer on progress towards learning objectives and sharing attendance sheets.
  • The topics to be covered during the coaching session, and included to the curriculum, are but not limited to:
    • Hygiene and safety; measurement methods; Tools and Work Space;
    • Food Types: Acid Foods; Acidified Foods; Low Acid Foods; Fruits and Vegetables
    • Food preservation: Preservation by chilling, freezing, canning, pressure canning, fermentation, concentration, dehydration, smoking, by chemical agents and novel non thermal techniques. Production of a range of foods using these manufacturing techniques and processes.
    • Food Packaging: Principles of flexible and rigid packaging of foods. Investigation of packaging types related to use with various food systems and packaging permeability. Passive and active packaging including modified atmosphere packaging and controlled atmosphere storage of foods. Reuse, disposability and printing of packaging. Labeling techniques and legislative requirements for labeling food and beverage products.

About you 

To be successful in this role we expect you to have a previous experience conducting training on Food Preservation and Packaging. Moreover, we also expect the following:

• Previous experience working with NGO’s

• Good verbal and non-verbal communication skills. 

• Arabic: Fluent 

• English: Basic
