Search for a professional with training/teaching or working experience in food production

The VTE4all project financed by the EU and implemented by GIZ, is designed to support Lebanon in the context of the protracted displacement crisis providing job-related competences for vulnerable Lebanese, Syrians and Palestinians. The main project approach is participatory and based on capacity development which aims to empower key stakeholders in Vocational and Technical Education. The project activity consists in developing curricula of Competency Based Training (CBT) modules in at least two sectors (different from construction). The selection of the sectors was made in a way to cover the needs of the local market and the CBT modules are delivered as short-term courses in the afternoon in a public school of the Directorate General of Vocational and Technical Education DGVTE and in the morning as a Travaux Pratique (TP) in the frame of a secondary technical education. The two sectors initially selected are furniture manufacturing and food production.

Outline of the mission

The professional is required to deliver the curricula of 4 CBT modules.

Here below the list of the curricula planned:

  1. Food preparation mechanical techniques (cutting, kneading and mixing)
  2. Food preparation chemical techniques (brining, curing and marinating, drying, fermentation and pickling, and salting, sugaring and seasoning)
  3. Food preparation cooking techniques (Baking and Blind baking, boiling and blanching, braising and stewing, infusion and steeping, pressure cooking, simmering, steaming)
  4. Food preparation techniques in frying (deep, pan, stir, air), microwaving and other heat application cooking methods (roasting, grilling and barbecuing, rotisserie and searing and broiling).

 

 

Requirements

  • 3 years of experience as a supervisor in a food processing facility whether in a hotel kitchen, restaurant kitchen, a cooperative, a dairy factory or other industrial setting or institutions.
  • 2 years of working experience in teaching subjects related to food processing and production.

or in alternative

  • 5 years of working experience in teaching subjects related to food processing and production
