Theoretical Trainer in Food Processing

The Project aims at: providing short term training to a group of dropout and unemployed Lebanese, Syrian and Palestinians youth; the training will include theoretical and practical sessions (90 hours) divided between 45 hours of agricultural training and 45 hours of poultry training.

The Theoretical trainer will conduct the program of 45 hours, in 11 days targeting between 18 and 25 youth.

Definition of the Mission

  • Activity 1: To animate the theoretical training, for a total duration of 45 hours during 11 days according to the curriculum that was validated by Mada’s team.

The contents developed during the classes should be based on the curriculum prepared by MADA and should include:

  • Basics to food processing
  • How to avoid leftover food wastage
  • Preservatives and preservation
  • Basics to food preservation? (Drying, refrigeration, and fermentation, pasteurization and freezing methods).
  • Introduction to food safety and its importance
  • Establishing food laboratories and the health conditions that must be met
  • Manufacturing of:
  • Yogert
  • cheeses
  • shanklish
  • Keshk
  • Jams
  • Pickels
  • Vinegars
  • Tomato paste.
  • Hot chili paste
  • Distillers
  • Dry nuts

 

 

  • Activity 2: To prepare a pre- and post-test.
  • Activity 3: To prepare the list of materials and equipment needed (to be provided at least 5 days before the beginning of the course)
  • Activity 4: To fill the daily attendance sheets of the trainees, daily sheets and final sheet (Templates will be provided by Mada).
