• Job Objective:
Responsible for all culinary activities in MGH kitchen: manage and train staff, plan menus, create recipes, oversee product purchasing and manage kitchen budget and costs, in accordance with approved standards.
• Main Tasks:
- Plan and direct food preparation and culinary activities
- Supervise kitchen staff’s activities
- Allocate tasks among team members and ensure their proper execution on time
- Coach team members by continuously following-up on their performance
- Maintain a positive and professional approach with coworkers and customers
- Ensure high quality of provided services by providing needed support to team members
- Ensure the proper application of the hospital’s policies and procedures
- Prepare Unit’s budget and submit to the head of Dietary Services for review and approval
- Monitor the unit’s expenses and ensure their compliance with the pre-set budget
- Prepare food purchasing request and follow up on receiving the food
- Review the quality system within the unit and propose appropriate solutions to improve the service through receiving customers’ feedback and complaints
- Arrange for equipment purchases and repairs
- Complete duties on sanitation check list and document it on log
- Follow and instruct staff on proper portion control when preparing and serving
- Cook food for each diet program according to the daily schedule
- monitor the kitchen’s cleanliness, safety, and organization
- Cater food as per pre-defined standards
- Improve menus or suggest new meals and present them to the Head of department for approval.
- Implement food safety standards , HACCP & ISO through ensuring:
- Quality of received materials & receiving terms as per safety standards
- Storing materials as per pre-defined storing conditions.
- Monitoring the temperature, quantity, quality, and catering method of catered food.
- Setting & implementing a cleaning & sterilization schedule for kitchen areas.
- Ensure proper implementation of all food safety related policies and procedures.
- Ensure proper implementation of accreditation standards.
- Counsel team members on dealing with problems that arise
- Ensure proper food costing to control the expenses of the kitchen menu
• Requirements:
- Education: Bachelor degree in Hospitality Management.
- Experience: Previous experience in a similar role in a hospital setting would be a plus
